Shanghai Mooncake

Since last weekend have a long 3days holiday so i plan to make mooncake again...
so plan friday make shanghai mooncake n sunday make traditional mooncake....but i manage to make the shanghai mooncake only....cause sunday i have request to make the pingpi mooncake for a fren who back from KL...
So here the recipe to make the shanghai mooncake:-

Shanghai Mooncake


Ingredients:
Skin Dough: - 250g butter
150g icing sugar
1 egg
1tsp vanilla extract
380g all purpose flour
3tbsp custard powder

Filling:- pandan lotus paste and red bean paste

Topping:- some sunflower/melon seeds

Egg Glaze:- 1 egg yolk, 1/2 tsp water, a pinch of salt (mix these ingredients together)

Method:
1. beat butter and icing sugar until fluffy.
2.add in egg & vanilla extract, and continued beating until combined.
3. stir in flour and custard powder to form a soft dough.
4. wrap the dough in wrapped paper & put in fridge for at least 30 min.
5. divide the dough into 40g and divide the red bean paste into 20g and the pandan lotus paste into 40g.
6. wrap red bean paste with pandan lotus paste and roll like a ball.
7. rough up the dough into round shape, fill in with pandan lotus paste and roll like a ball.
8.place them to the baking trap and brush the surface with egg glaze
9. bake at 180C for 10 minutes, remove from the oven then brush with egg glaze again and top with sunflower/melon seeds and bake for another 10 minutes.
10. leave to cool before lifting.

*tips:- you can replace the red bean paste with salt egg

*How to prepare salt egg:-
1.remove the egg white before you cook the egg (you only need the egg yolk)
*if u do not like the duck egg smell too strong, u can soak the egg yolk with rice wine for a while.
2. u can either steam the egg yolk for 2 min / baked the egg yolk for 7-10 min.

The recipe might look complex but actually is quite simple...so don't let the instructions scare you from trying it...

Pandan Pingpi Mooncakes

Last weekend i try out the pingpi mooncake on the recipe book i bought....
so buy some pingpi mooncake mould and the ingredients...
i malas to make the lotus filling, so i just bought those ready made from the bakery store....
so i actually do the pingpi skin and start forming the mooncake n i'm DONE with the pingpi mooncake....simple?

Pandan Pingpi Mooncakes

so in order to start, we need the ingredients:-
For Skin:
A : (sieved together) 80g commercial koh fun, 30g cooked cornflour, 40g icing sugar
B : 30g shortening, 30g liquid glucose
125-150ml pandan juice(blended with 15 blades pandan leave,strain out solution, cooked and cool well)

Paste filling: i buy ready made pandan lotus & red bean lotus(from bakery store)

Utensil : mooncake mould

Tips:
1. Commercial Koh Fun actually is cooked glutinous rice. but cook is so time consuming so just buy those ready cooked glutinous rice called 'Koh Fun'.
2. Cooked Cornflour - take the cornflour to steam for 10-15min.
2. pandan juice - is important to form the color of the pingpi skin. if u dun wan to put pandan juice, u can replace with pandan essence and some green coloring...

Method:
1. For skin: Combine ingredient(A) and ingredient(B) together. Knead into a smooth dough. Cover and rest dough for one hour or keep chilled overnight.
2. Scale the filling and dough according to ur mooncake mould and shape round, set aside.
3. Flatten the skin and wrap in the paste filling. Shape round dust with koh fun, place into mould, press and dislodge imprinted mooncake. (u can dust so koh fun on the mould too)

Commet from family,relative n fren:-
- not too sweet, Good! outside sell one so sweet....
- the skin is too thick, shud make more nipis....(ok next time will make nipis-nipis)
- but some relative like to eat thick skin say is Good!!! better than outside one...haha *happy*

Overall the mooncake is not bad lar....jz the skin might be too thick lar....
i will practice more so will the skin consistent among each of the mooncake....hehe~~

Crystal Jelly Mooncakes

Bought tis Pingpi Mooncake recipe few weeks back...so decide to try out the most simple mooncake in the book, 'Crystal Jelly Mooncakes'....
When to the bakery store buy the mini jelly mooncakes moulds.....and the ingredients....
so here the recipe:-

Crystal Jelly Mooncakes

For Skin:
1/2 tbsp agar-agar powder
50g white sugar
325ml water
1 blade pandan leaf(knotted)

Paste Filling: i use red bean & lotus paste(buy ready made from bakery store)

Utensil : mini mooncakes mould

Method:
1. For Skin: Bring the skin ingredients to a boil. Turn off heat, discard pandan leaf. Leave to cool slightly.
2.To shape filling: As per your desire, take either one / two of the filling type to mix together and shape into rounds.
3. Pour a little of no.(1) into mould. Let it set slightly,place in a piece of the filling of no.(2). Fill no.(1) to the surface of mould. Allow it to set well, keep chilled.
here my product result...is not bad actually except the filling is more than the skin..so not taste tat good lar :P haha~~~~

so is very simple to do mooncake...those interested u can try it out.....

y i say fully agar-agar mooncake ler....cause the above one use the lotus/red bean paste as the filling n not the agar-agar as the filling.....
so if u wan the filling to be agar-agar too u c try out tis recipe....
